Dragon Well Tea
Dragon Well (Longjing or Lung Ching) is one of the most celebrated teas in China. It is well known for its light jade-green colored liquor, earthy aroma and a lingering mellow chestnutty flavor. The hand flattened dry leaf is distinctive for its bright and shiny texture. To prepare a superior cup of Dragon Well make sure to use cooler water than you might otherwise use for green tea to preserve its delicate taste.
The name "Dragon Well" comes from the Tiger Run Spring which sits near the heart of the Hangzhou where this famous tea is cultivated. In Chinese legend dragons favor such watery lairs.
