Caffeine
Most true teas, derived from the leaves of Camellia sinesis, contain a lesser or greater amount of caffeine. Tisanes generally contain no caffeine. Most of the caffeine in tea is released in the first 30 to 60 seconds following infusion. Thus, you can decaffeinate tea at home by steeping your tea for 30 seconds pouring out the liquor and then pouring on fresh water. This second infusion’s caffeine content will be 80% less than if it was infused normally.
