Irish Breakfast Tea

Irish Breakfast is the name given to black teas that tea blenders believe will give the drinker a good pick up at the beginning of the day. It tends to be a bit stronger and fuller bodied than English Breakfast blends. There are many different blends called Irish Breakfast; most of the better ones use Assam or Ceylon tea.

The infusion that results is full bodied and brisk. If the tea is full-leaf variety it can steep up to 5 minutes. If however, it is a broken-leaf variety then keep a close eye on the infusion so that it does not over steep, becoming bitter. Just as Assam, Irish Breakfast is robust enough to hold up to the addition of milk.
